🫓 For the Flatbread:
3/4 cup all-purpose flour (90 g)

2 tbsp plain yogurt

1/4 tsp baking powder

Pinch of salt

Water as needed to form dough

🧄 For the Garlic Yogurt:
1/2 cup thick plain yogurt

1 garlic clove, grated

Pinch of salt

🍳 Poached Eggs:
2 eggs

Water + a splash of vinegar for poaching

🔥 Spiced Butter Sauce:
1 tbsp butter

1/2 tsp chili flakes or sweet paprika

🧅 Pickled Red Onion:
1/4 red onion, thinly sliced

Juice of 1/2 lemon

Pinch of salt

🌿 Herb Salad:
A handful of fresh parsley

A handful of arugula (rocket)

Juice of 1/2 lemon

Drizzle of olive oil

Salt to taste

🔪 Instructions
Make the flatbread dough – mix flour, yogurt, baking powder, salt. Add water if needed.

Roll it thin and cook in a pan until golden and crisp.

Mix yogurt with garlic and salt.

Poach the eggs in gently simmering water with vinegar for about 3 minutes.

Slice red onion, soak in lemon juice + salt for 10 minutes.

Melt butter, add chili flakes or paprika – let it sizzle.

Toss parsley + arugula with lemon juice, olive oil, and salt.

Assemble:
 – Flatbread base
 – Garlic yogurt
 – Poached eggs
