Toas to our new friend promised us that the store would be open every day with fresh produce, and the prices were just perfect. Back in my kitchen, my friends Janice and Prince helped with the prepping, and that made everything even more fun. Thanks to Xavier who took us shopping. To make this hardy lentil soup, we started by boiling the lentils for about 20 minutes. And then we added our vegetables in the order in which it took the longest for them to cook. Once everything is tender, pour in some creamy coconut milk. Just before the end, stir in your tomato sauce and season to taste, baby.
