Shrimp and Scallop Spiedini. As promised we have another Lenten recipe to share. These shrimp and scallop skewers or spiedini in Italian are so flavorful and delicious and perfect for fish Fridays. They’re super simple to make too. Just coat them in a simple breadcrumb olive oil marinade and place them under the broiler. This is a light and healthy Friday dinner and goes perfectly with a simple lemony salad. They can also be grilled so you’ll definitely want to save this one for summer!!
Recipe
1 lb shrimp
1 lb scallops
1/2 c olive oil
1/3 c chopped parsley
1 garlic clove chopped (optional)
1/4 c plain breadcrumbs
1/4 c panko breadcrumbs
Salt and pepper
Lemon wedges for serving
In a large bowl combine the olive oil, parsley, garlic if using, and breadcrumbs. Season with salt and pepper. Add the shrimp and scallops and turn to coat. Let stand for about an hour. Skewer the shrimp and scallops alternating each. You should have a bout 6 skewers. Top any remaining breadcrumb mixture over the tops and broil until golden on each side. Should take about 5-6 minutes depending on your oven. Squeeze some lemon juice over them and serve over a bed of mixed greens drizzled with olive oil and lemon juice.
