It’s tossed in a bright, zesty lemon herb dressing that makes every bite refreshing and full of flavor. Start by gathering the ingredients to make this recipe. Use two 15.5 oz cans of chickpeas that are rinsed and drained. Add them to a large bowl. Then add 1 cup of cherry tomatoes that are quartered, 1 cup of diced cucumber, 1 cup of diced red bell pepper, 3 oz of crumbled light feta cheese, 1/4 cup of diced red onion, and 1/4 cup of chopped olives. Lightly toss these ingredients and then make the dressing. Crush one garlic clove. Then add 1 tbsp of olive oil, 2 tbsps of lemon juice, 1 tsp of dried oregano, 1 tsp of don mustard, 1 tsp of dried basil, 1 tsp of dried parsley, 1/4 teasp of salt, and 1/4 teaspoon of pepper. Thoroughly whisk to combine all of these ingredients for the dressing. Once combined, pour it over your chickpea salad. Thoroughly toss the salad again to make sure it’s evenly coated in the dressing. Once done, chill the salad in an airtight container in the fridge for at least 30 minutes to allow the flavors to further melt together before serving. Enjoy.
