Here is my first Sourdough Loaf. Okay…let the critiquing begin. I am a huge cook…not so much a baker, but I am going to get this down. I am one that once I get going on something…it's game on.
Levain 30g Arthur bread flour 12.7% 30g Arthur whole what flour 13.2% 60g water 30g ripe sourdough starter(bread flour and whole wheat flour I use, starter is 3 months old)
Main Dough 822g Arthur bread flour 64g Arthur whole wheat flour 745g(holding back 95g) water 17g salt 151g ripe levain
Now let me say, I used a cast iron loaf pan for the right loaf…it was clearly too small. Left loaf was cast iron Dutch oven 7qt. Used those sourdough baking slings to drop in after preheating to 500. Dropped down to 450. 20 min with lid on, 30 with out.
Didn't get spring from left loaf as you can see.
After in Benetton and shape, it was in fridge for 10 hours.
Took out right before baking, did a terrible score job as you can tell and off it went.
Okay, fire away!
