Apologies to any purists if this came out nontraditionally.
Basic roasts with veggies bore me a bit so this is a Spanish/Cuban dish I figured I'd try out.
Chuckroast or flank steak (seared and later pulled). Beef broth and tomato paste. Bell peppers, onions, and olives. Parsley, garlic, cumin, paprika, salt, and pepper. Will be served over/with cilantro lime rice. Possibly some other things in the pot I'm not remembering.
Don't ask me for measurements, I cook with my soul.
