KALAMAZOO, MI — Zazios is returning to the Radisson Plaza Hotel five years after closing its doors. But this time, it’s for delivery only.
A few favorite appetizers, salads and pasta dishes from the shuttered upscale Italian restaurant will be whipped up behind the scenes across the plaza’s many kitchens, said Greenleaf Hospitality CEO Tim Rayman.
It’s the company’s first time trying a “ghost kitchen” concept, he said.
“Our culinary staff is always trying to get creative on things we can offer in the Kalamazoo landscape,” Rayman said. “Instead of creating something completely different, why don’t we go back to our roots and do the staples?”
The pared-down menu features memorable pasta dishes from the restaurant’s 16-year run, like the sausage and pepper rigatoni for $21 and lasagna Siciliana with house made egg pasta and meatballs for $20.

Delivery begins Friday, Feb. 7, and will be available this month only, per a press release. Orders can be placed via DoorDash and Grubhub between 5 and 9 p.m. Tuesdays through Saturdays.
If the community responds to it, Zazios could stick around, Rayman said.
“We intend to keep it open as long as it’s popular,” Rayman said. “In the future … Greenleaf might experiment with more ghost kitchen concepts.”
Zazios first opened in 2004 and closed its doors in November 2020. It was replaced by Brick and Brine in 2022. The restaurant’s return in part of Greenleaf Hospitality’s 25-year anniversary celebration.
