





Both tiers are spiced apple and dulce de leche.
I took this on last October and only just getting around to sharing!
If interested here’s a couple insights! ☺️
The brief was a Loch Ness inspired 50th birthday cake. I had always wanted to try tartan but I couldn’t quite bring myself to give it a go.
Trying to get the weft and warp weave that’s characteristic of tartan – setting it aside from plaid – I found a challenge. I tried airbrushing but it didn’t quite do justice for the 3 dimensional feel of the fabric very well. After reading up on Albena Cake design’s way of working with royal icing and an incredibly thin tip. I found this to work well in conjunction with fondant panelling (I wanted to use modelling chocolate but couldn’t due to allergies). I settled on leaving an impression in the fondant with a straight edge and piping the layers on top for fine detail.
Pic 4 is the Loch Ness tartan which I tried to create the impression of – please be kind! It wasn’t meant to be exact 🤣👌
I’m happy with how it turned out but could definitely do it better next time and save myself a few hours of trial and error.
The dual tone teal effect is airbrushed on the bottom tier. I really loved the simple(ish) texture.

The water looks like glass tiles to me, so cool! But man I wish I could taste it. Spiced apple and dulce de leche!?! I might have to try that sooner than later.

Please do tartan again! This cake looks really good but I can see some messy spots on the tartan which is to be expected when you try a new technique. I would love to see another go now that you have this one under your belt. What a creative cake!
