Today, we’re diving into one of my all-time favorite Italian comfort dishes — Eggplant Rollatini — a lighter, veggie-forward twist on traditional lasagna. This recipe is rich, cheesy, full of flavor, and surprisingly simple to make! Perfect for a cozy family dinner, meal prep, or when you’re craving Italian without the guilt. 🥄 INGREDIENTS:
For the Eggplant:
3 large eggplants, sliced lengthwise (¼ inch thick)
Salt (to draw out moisture)
Olive oil spray (for roasting)
For the Filling:
1½ cups ricotta cheese (whole or part-skim)
1 cup shredded mozzarella cheese
¼ cup grated Parmesan cheese
2 cloves garlic, minced
2 tablespoons fresh basil, chopped (or 1 tsp dried)
Salt & pepper to taste
For the Sauce:
2 cups marinara sauce (homemade or your favorite store-bought)
1 tsp dried oregano or Italian seasoning
Optional: red pepper flakes for a kick
For Topping:
½ cup mozzarella cheese (extra for baking)
2 tablespoons Parmesan cheese
Fresh basil for garnish
🍽️ DIRECTIONS:
Prepare the Eggplant:
Slice eggplants lengthwise. Sprinkle with salt and let sit for 20–30 minutes to release bitterness. Pat dry. Lightly oil and roast or grill slices until soft and flexible (about 10–12 minutes at 400°F).
Make the Filling:
In a bowl, mix ricotta, mozzarella, Parmesan, garlic, basil, salt, and pepper.
Assemble the Rollatini:
Spoon a bit of filling onto each eggplant slice and roll tightly. Pour some marinara into the bottom of a baking dish. Place rolls seam-side down. Top with more sauce and cheese.
Bake:
Cover with foil and bake at 375°F for 20 minutes. Uncover and bake another 10–15 minutes until bubbly and golden.
Garnish & Serve:
Let cool slightly. Top with fresh basil. Serve with a crisp salad or garlic bread!
💡 Tips for Success:
Want to make it even healthier? Use low-fat ricotta and reduce mozzarella.
Vegan version? Swap out cheeses for cashew-based ricotta and vegan mozzarella.
