Recipe:
1. Confit Cherry tomatoes
– 200g cherry tomatoes + salt + olive oil
Bake at 180°C 25-30 mins.
2. Spinach pesto

– 2 tbsp pine nuts/ pinoli
– 1tsp salt

Blend until a chunky emulsion is formed
