Our fkaca has been sitting on the counter all day. I did put it in the fridge overnight to proof. And then there were a couple of coil folds that I didn’t show cuz I was running back and forth. But that is what she’s looking at. She’s nice and loose, which you usually don’t want for a loaf of bread, but for fkaca you do. Either which way we’re going to be baking this, so there’s that. And we are gonna be doing our cheesy bread fkatcha. So this is so fun. I am gonna go ahead and add in the cheese inclusions for this. So I’m going to be taking like a cup and a half of cheese. You all can most certainly shred your own cheese. Love that for you. I’m not doing that right now. That’s a little bit more, but the more the better. And then like a tablespoon of Italian seasoning. This already smells so good. I don’t think I’m going to be able to wait for this to like properly proof actually turn into fkaca. I think I’m just going to have to to like make it and eat it because I’m I’m struggling with containing myself right now. But I can definitely tell that like doing the poke test or where you’re supposed to dimple it, it would not do anything like cuz you’re supposed to do the dimples to collect all of your oil and your butter and stuff, this just bounces right back. It’s also not like overly sticky. I did like dampen my hands a little bit, although it’s mostly absorbed all that moisture. There really shouldn’t be a reason for other than it’s just not overproofed for it to not be sticking. That looks decent, right? Thoughts? Look at that. Let me actually do some coil folds, too. Awesome. Maybe this is just going to be like not fatcha and it’s just going to be a cheesy loaf because I’m not waiting until it overproofs it. I think we’re going to we’re about to do this. You get my drift and it’s just going to be what it’s going to be, which I bet is tasty. I think that’s She is definitely not an overproofed queen, which usually we love. But not with fkaca because we want it kind of overproofed. So now I’m going to get the pan ready. And well, I’m just going to kind of like let her sit. She hasn’t like gotten all bubbly like fkashi usually does. Probably because she’s not overproofed. So, well, let me think on it for a
