Made the sauce separate from the guanciale this time (though did add some fat to the sauce). Used bucatini, as my pasta supplier was out of fresh spaghetti.

    The guanciale looks a bit burnt. If it were, my advice would be to take it out of the pan before it gets as crispy as you want it and let it cool down a bit, then you add it to the pasta

    looks dry. maybe add more pasta water next time
