What is this weird white spot on my chuck roast?

    Could be a tumour of some kind or a fatty deposit. If everything smells fine, just trim it out.

    As the son of a self employed butcher. That meat ain’t right. Smell?, texture and color are all way off. The spot might have been an abscess. Should have been cut away during processing. These big processing plants are about volume, not quality. Find a mom and pop shop or at least a place that slaughters what they sell.

    I would not eat that, doesn’t even look like a chuck roast looks more like a round roast

    Whole thing looks questionable. One time I was helping my dad break down a half front quarter and we found a cyst about the size of a golf ball. Out of curiosity I cut it out and kept it intact so we didn’t taint any of the meat in that area and then I cut it open and it smelled strongly foul. Smelled like really bad feet. Luckily the membrane it had surrounding it was very tough and none of the meat surrounding it smelled off or looked bad but we trimmed the whole area out just to be safe.

    Silver skin is a connective tissue that should be trimmed. It by itself does not indicate spoilage. Why choose this cut if you’re not sure about the color of the roast?

    That whole slab of meat looks very obviously spoiled.

    If I had to take a guess, an infected pocket of pus, like a cyst or something. It’s not good, discard it.
