What can I say. The better food looks to me, the more motivated I am to eat it. AND I'm living solo for 2 weeks so what else is there to do.

Anyway – lemons for dressing, cucumber, tomatoes, baby spinach, red onion, capsicum, massaged kale with evoo, roast potatoes, salmon, eggs.

I just scooped half into a bowl, and I have enough for leftovers tomorrow!
