Recipe Title : French Tomatino Salad with Penne Pasta

Ingredients
1. Chicken breast – ½, cut into thin slices
2. Penne pasta – 1 small pack
3. Cucumber – 2 medium, deseeded and cubed
4. Onion – 2 medium, cubed
5. Tomatoes – 2 large, fresh, deseeded, and cubed
6. Cabbage – 1 cup, cut into cubes
7. Black olives – ½ cup
8. Roasted cashews (kaju) – 1 cup
9. Black pepper – 1 tsp (freshly crushed)
10. Tomato paste – 2-3 tbsp
11. Cream cheese – 2-3 tbsp
12. Nestlé cream – ½ to 1 cup
13. Vinegar – 2 tbsp
14. Soy sauce – 2 tbsp
15. Paprika– 1 tbsp
16. Olive oil / butter – as needed
17. Chili sauce – to taste
18. Oregano– 1 tbsp
Method
Marination:For the marination, combine chicken pieces with salt, black pepper, oregano, soya sauce, vinegar, chili sauce, paprika, olive oil, and finely chopped garlic in a bowl. Mix well to ensure all pieces are evenly coated, then cover and let it marinate in the refrigerator for at least 1-2 hours to allow the flavors to fully penetrate the chicken. Now, grease a grill pan and place marinated chicken, grill for 2 minutes per side for a smoky flavor. Once cooked, let it cool, then cut into cubes.
Preparation of Sauce: To prepare sauce, add 2-3 tbsp olive oil or butter in a pan. Add 1 tbsp chopped garlic, sauté. Then add 2-3 tbsp tomato paste and ¼ cup water. Add 2-3 tbsp cream cheese and Nestlé cream.Season with crushed black pepper and oregano, a pinch of salt, and 3-4 tbsp finely chopped cashews. Now let the sauce cool down.
Once the sauce has cooled slightly, prepare the salad by cutting all vegetables into uniform cubes and placing them in a large mixing bowl. Then add the grilled chicken, 3-4 tablespoons of whole cashews, and the prepared creamy sauce to create a rich, tangy flavor. Gently mix all ingredients until well combined and evenly coated with the dressing. For serving, arrange the salad on a large platter, drizzle with additional cream if desired, and chill before serving to enhance the refreshing quality of the dish.
