Spicy Pani | Tangy Pani | Meetha Pani | Jamuni Pani | Theekha-Meetha Pani

For Theekha (Spicy) Pani:
Fresh coriander leaves
Fresh mint leaves
Green chillies
Ginger
Chilled water
Lemon juice
Roasted cumin powder
Black salt
Hing (asafoetida)
Regular salt – to taste
Boondi

For Meetha (Sweet) Pani:
Soaked tamarind (imli)
Jaggery (gur)
Chilled water
Red chilli powder
Salt
Black salt
Roasted cumin powder
Ice cubes
Boondi

For Jamuni (Jamun) Pani:
Frozen jamun (black plum)
Fresh mint leaves
Roasted cumin powder
Black salt
Chilled water
Ice cubes

For Theekha-Meetha (Spicy-Sweet) Pani:
Tamarind-jaggery puree (from Meetha Pani)
Mint-coriander-green chilli-ginger puree (from Theekha Pani)
Chilled water
Chopped onion
Chopped fresh coriander
Roasted cumin powder
Black salt
Boondi

Preparation Method
Theekha Pani (Spicy Pani):
Blend:
In a blender, add coriander, mint, green chilli, and ginger. Blend to a smooth paste.

Mix:
In a bowl, mix the blended paste with chilled water.
Add lemon juice, roasted cumin powder, black salt, hing, and regular salt.
Stir well. Add boondi

Theekha Pani is Ready!

Meetha Pani (Sweet Pani):
Soak tamarind for 10–15 minutes and extract the pulp.

Heat a pan, add tamarind pulp and jaggery. Cook until jaggery melts and thickens slightly.

In a bowl, mix this puree with chilled water.
Add red chilli powder, salt, black salt, roasted cumin powder.
Stir well. Add ice cubes and boondi.

Meetha Pani is Ready!

Jamuni Pani (Black Plum Water):
In a blender, add frozen jamun, mint leaves, roasted cumin powder, and black salt. Blend until smooth.

Mix with chilled water
Add ice cubes.

Jamuni Pani is Ready!

Theekha-Meetha Pani (Spicy-Sweet Pani):
In a bowl, combine the imli-jaggery puree and mint-coriander-green chilli-ginger puree.

Add chilled water, chopped onion, chopped coriander, roasted cumin powder, and black salt.

Mix well. Add boondi.

Theekha-Meetha Pani is Ready!

Serving Tip:
Serve each pani in small bowls alongside crispy puris and a spicy or tangy potato/chana stuffing.
