Recipe:-
Potatoes – Peeled and Cut Into Wedges
Olive Oil – 1/3rd Cup
Chicken Stock 1.5 Cups
5-6 Cloves of Garlic
2 Tsp Salt
Oregano
Lemon Juice from 2 Lemons

Cook for 60 mins in the Ninja Oven on Roast Settings, Turn the potatoes every 15-20 minutes.
Once cooked place the Greek Lemon Potatoes into a separate dish and pour over the remaining juices. Leave for 10 to 15 minutes before eating.

Hi everyone. Right, today we are making Greek lemon roasted potatoes in the Ninja air fryer and they’re going to taste absolutely amazing. Okay, so what we have in the ingredients, we have our potatoes. We have got our olive oil, which we’re going to need. We’ve got chicken stock, or you could use vegetable stock if you wanted. Uh we got garlic. I’m using some frozen garlic today. Uh you can’t Fresh is best, but frozen’s okay. You can use that. Got some salt. We have some lemons. And we have actually this is a Greek potato seasoning, but oregano is a good substitute. You can use that instead. So, right, let’s uh start peeling away. Okay, so start making these into wedges. So, we’ll start peeling a potato. Okay, that’s the potatoes peeled. Now, we’ll cut them up into wedges. So, what I tend to do, I’m going to probably get this wrong cuz Joe will have a go at me. Cut them in half and then cut them just like that to make lovely wedges. There we go. Okay. So, that’s all the wedges cut. Joe’s much quicker than me, so uh she did it for me. So, saves me doing the job. Okay, next. Right, where are we next? What we’ll do, we’ll uh put the stock into here. So, one cube, one chicken stock. Put that in there. And what we do, we’ll get 1 and 12 We’ll get 1 and 1/2 cups of boiling water and add that in. one. Try not to get much on the side. One and a half cups. That’s plenty. And we’ll just mix that up. Okay. Break up. Nice chicken stock. Okay, we still need our cup. What we’ll also do is get olive oil, any olive oil you like. And we’ll put that a third of a cup, third of a mug of olive oil. It does make all the difference. Bit bit more. There we go. Perfect. Perfect. Right. Okay. Chicken stock. Done. Let’s put pour that in all over the potatoes and soaking that. Lovely. We go. Getting good. Right. Olive oil. Next. Going to pour that in as well. All in with the potatoes. All the drops in there. Right. We’ll get some salt. We’ll add salt in. So, we got some rock salts. Himalayan rock salt. Again, be generous with the salt. Said maybe two teaspoons, but be quite generous with the salt. Get quite a lot in there. And next, we’ll add in our garlic. We get our garlic. Sprinkle that all over. So again, like I said, I’m using frozen garlic, which has been defrosted, but fresh is best. Yeah. I would say at least five, even six cloves of garlic would be great in this. Okay. And then next, we’ve got our You can use oregano, but this is come back from Greece. Special mix for potatoes, but oregano is a great substitute. Again, just sprinkle it all over. Sprinkle it all over. You can’t get enough of this stuff. This is great. Okay. If you want to add a bit more later on, you can do. Yeah. I would mix that up. Get it all in there. Get all the juices in. The olive oil mixed in with the herbs, with the salt. Okay. And then finally, we get the lemons. So, we’ve got a couple of lemons. We’ll give them a bit of rub roll. Get the juices flowing. Cut the lemons up. Okay. And then just basically take the lemon and squeeze it. Get all the juices in there. Get them in there. Squash it down. Squash it in. Okay. You don’t want the pips in there, but just get all the juices in. To the next one. And I usually start with three halves of lemons in there to get the juices in and save one for later on in the cooking process. There we go. Lots of lemon juice in there. Okay, perfect. Right, and we are ready to go. So, I’ll just wash my hands and we’re ready to go. Okay, so we’re going to cook these bad boys, these potatoes in the Ninja air fryer. This is the grill version, but it air fries as well. So, let’s stick them in. They look good, right? So, we’re going to turn them on. Going to go to roast. I would select the roast option. 180 degrees is good. And we’re going to go up for one hour. And let’s do 10 minutes, but I think an hour should be plenty. Let’s go back. There we go. Hour and 10 minutes. And ready to go. It’s just doing a preheat, but it doesn’t matter if you stick the uh roast potatoes in, the Greek potatoes in um to start with. That’s fine. It’s not a problem. Right. So, we’ll let that one preheat, let that finish, and then uh they’ll be ready to cook. Okay, so it’s done the preheat. It’s ready to add food. We’ve already put the food in. So, we just lift the lid up. Everything’s looking good. Ready to go and close it down. Right. So, what I suggest after every 15 minutes, 20 minutes, you just check on them and just move them, toss them, and turn them over. So, we’ll be back in 20 minutes. Okay, so we’re nearly at 20 minutes in. So, let’s take a look and see what these bad boys look like so far. Okay, so you can see them browning up on top there. So, they are starting to look good. Don’t worry about that. Just mix them all in. Just mix it in. Turn over the bits that are getting crispy. Turn them over. Start doing the other sides. So, yeah, looking good so far. They are looking excellent. And just wait until they’re done. So, right, another 20 minutes and we’ll give it another stir. Right. Okay. So, that’s another 20 minutes in. Let’s have a look and see how these potatoes are cooking. Okay, they are looking good. They are looking good. No, they’re not burnt. They’re just a bit crispy, but you just soak them in the juices. So, soak them in. Get all those juices in with all of the potatoes. Turn them over. So, anything that’s not cooked on the outside, turn it over. Get it cooked all the way through. There we go. Just turn these bad boys over. There we go. We want to get cooked on both sides. We want to make sure they’re nice and succulent, nice and soft. There we go. In those juices, in the chicken stock, the garlic, we got the lemon in there. We got the olive oil. Yes. Looking good. And we got the garlic as well. So yeah, just turn any bits that are getting crispy on the outside over Okay, looking good. And now we’ll give it another 10 to 15 minutes and have a look. Uh I reckon in another 10 minutes I think we do the last bit, the last half we’ve got of our lemon. We’re going to squeeze the juices in that as well. So yeah, back in about 15 minutes. Okay. So, we got I reckon 13 maybe 23 minutes um maximum left to cook these. So, what I’m going to do is just add in the extra half a lemon. Look at those sizzling now. They look they’re looking good. They are looking very good. Let’s just put the lemon juices in. Let’s squeeze that lemon in there. Let’s squeeze those juices. Get them all in. All over. Look at that. That’s going to taste absolutely beautiful. Give them one final little stir. And you can see all these juices now are just soaking into the potatoes. They’re looking amazing. I reckon we got another 10 15 minutes of these and they’re going to be good. Right. Okay. Let’s uh finish these off. Okay, so we are basically 1 hour into our cooking time. So, let’s have a quick look and see what they’re looking like now. Okay, they are looking amazing. They look fantastic. Let’s just do a test. Just Oh yes, they are absolutely perfect. Yeah, they may look crispy and a little bit burnt, but hey, they are fantastic. So, I think we’re done. So, we’re going to turn off the Ninja. Let’s just turn him off. Okay, they are done. What I suggest you do now is basically let them rest for 10 minutes just to let them soak in all the juices. What I generally do is transfer them into another dish into a big bowl out of here and just uh let them rest. Let them soak in all the juices into those potatoes, all the garlic, all the lemon, all the olive oil and they will taste absolutely fantastic. So, let me just transfer them into another bowl. Right. So, let’s transfer all of the potatoes into this other bowl. The Ninja one’s going to be very hot, so don’t touch that. But yeah, transfer all the uh lemon Greek roasted potatoes into your other bowl. And what you do in the end as well is put all the juices across the top of these and let them just soak in. And after 10 minutes, when they’ve cooled down a fraction, they will taste absolutely amazing. These may be some of the best roasted Greek lemon potatoes you’ve ever had in your life. I don’t want to burn them. I’ve spilled everywhere. Okay. All right. Okay. So, they’re all transferred and all you’ve got is some of the juices left in there. So, what I’m going to do here we go. Look at this. Let’s pour all of this oil, all these juices and the garlic bits. Oh, the garlic bits. Everything. Look at that. Those bits out. Just transfer everything out. There we go. Get them all covered and smothered. Look at that. Beautiful. Absolutely gorgeous. Right. So, I would leave those for 10 10 minutes, maybe even 15, just to cool down a bit, but they will taste delicious. Okay. So, if you like that, um, I would suggest you try them. Right, let’s do a taste test on one of those garlic potatoes. Okay, let’s try this. Oh yeah, that is gorgeous. That is lemony, soft. You can taste the flavors. You can taste the herbs.
