Step one, in a pot, heat two tablespoons of olive oil. Add one chopped onion and three minced garlic cloves. Saute for 3 minutes. Step two, stir in 1 tbsp of ground cumin, 1 tsp of cinnamon, 1 teaspoon of smoked paprika, and a half a teaspoon of turmeric. Cook for 1 minute. Step three, add two diced sweet potatoes, 1 can or 400 g of drained chickpeas, one can 400 g of diced tomatoes, and 1 cup of veggie broth. Step four, season with salt and pepper. Cover and simmer for 25 minutes until sweet potatoes are tender. Step five, stir in 1/4 of a cup chopped cilantro. Serve with couscous. And that’s it. Enjoy.
