I visited my sister in New Jersey and picked up a Greek salad from the deli counter and it was so delicious so I recreated it as soon as I got home. It has a lot of white vinegar so it only tasted better over time.
Recipe
2 large Cucumbers (400 grams) with the middle scooped out- you don’t have to do this.
8 Tomatoes (1,000 grams)
1 green pepper (120 grams)
black olives (100 grams)
1 big purple onion (450 grams)
A whole block of feta cheese
Dressing 2 cups (or more) of white vinegar, 1 cup of red vinegar, a lot of oregano, garlic powder, pepper, and salt to taste. Add the vinegar first because it neutralizes the spice of the purple onions. Then finish off with olive oil to taste. I used about 30 grams.
