Homemade gyro meat! Making gyro meat at home is actually pretty easy and doesn’t take too much time! You can make it with lamb, beef, pork, chicken, or whatever you want! Just remember it’s pronounced Yee-RRo or it will not be Greek approved. I decided to level it up a bit and smoke it in my @Traegergrill

1 small onion
3 cloves garlic
4 oz bacon chopped
2 lb lamb ground
1Tb Salt
1tsp cumin
1 Tbsp oregano
1/2 tsp pepper
*optional 1 tsp Aleppo pepper*

** If you want to use other meats, you can omit the bacon, just make sure the meat has enough fat
.
In a food processor, pure the onion and garlic. Add in the bacon and pulse until fine. Add in the remaining ingredients and purée until it turns to a fine paste (it should be pasty and sticky). Place the meat mixture on a sheet tray with parchment paper. Cook it in a 325 oven or smoker for 30-40 min or until the internal temperature is 155F. Remove it and let it cool completely (this will make slicing easier). You can even leave it in the fridge overnight. Slice 1/4″ slices and sauce in a pan with a little oil until it’s golden brown all over. Assemble your gyro however you like… I like Greek pita, tzatziki, meat, onions, tomatoes, and some cucumber.

Homemade yo meat. It’s an easy homemade yo. Not a girro, not a gyro. It’s yo. Did you know making homemade euro meat is actually really easy to make? And you get these awesome euros that everybody’s going to love. Hey, Zach, you know what a yo is? Isn’t that money in France? No, that’s a euro. Close enough. Okay. Grab a food processor, small onion, three cloves of garlic puree. You want it nice and fine. For the meat, you can use ground lamb, lamb and beef, lamb and pork, chicken, whatever you want. I’m using lamb, but I’m going to add 4 oz of bacon to add the fat. Pulse. Then go 2 lbs ground lamb, cumin, oregano, salt, pepper, and I’m going to use some Aleppo. Now, here you want to process for a minute or two until it gets nice and sticky. It should look like a paste, not like a hamburger. Onto a sheet tray with parchment and mound it into a loaf. Now, into a 325 oven, but I’m going to level up. I’m going to take it to my smoker. Pop it onto my smoker at 325 and I let it cook for 30 to 40 minutes or until the internal temperature is 155. Pop it in the fridge to cool completely. Once it’s cooled, cut about 1/4 in slices and you got this fully cooked yo meat, but then you got to crisp it up. Drop it into a hot pan with some oil and keep flipping it until it’s nice and golden brown all over. Then you got to assemble your euro. Do it however you like. This is how I do it.
