A new Italian restaurant is set to open in Covington this week.Carmelo’s, a new collaboration between veteran chefs Billy Grise and Mitch Arens, will be located at the corner of 5th Street and Madison Avenue in the heart of northern Kentucky’s largest city.According to Carmelo’s website, the restaurant seeks to honor the memory of Grise’s great-grandfather Carmelo Caserta. Grise grew up working at his family’s restaurant, Caserta’s, which inspired Grise’s love for cooking. Now, after operating several other restaurants, Grise is returning to his roots with Carmelo’s culinary choices.”Carmelo’s carries on the legacy of all the beloved grandfathers that came before us with comforting, Italian American classics in a welcoming and abundant environment,” a press release promoting the restaurant read. “Blending both traditional and contemporary culinary inspirations, the menu will draw from classic Italian American influences and utilizing fresh, local ingredients. The same mix of inspiration will be activated in the restaurant’s interior which includes an original, historic arch which will give guests a peek into the bustling kitchen and a series of rooms within the space which can be utilized for private events as well as lend a sense of intimacy to everyday dining.”The restaurant’s grand opening will be held on Nov. 5. at 4 p.m. Hours will regularly run from 4 p.m. to 9 p.m. on Tuesdays, Wednesdays, Thursdays, and Sundays. On Fridays and Saturdays, the restaurant will be open an additional hour and close at 10 p.m. Carmelo’s will be regularly closed every Monday.A “soft launch” was held earlier this week for the restaurant, with culinary previews for media and guests.More information can be found on Carmelo’s website.
