I'm a professional chef from Germany and today I realized that McDonald's is selling little packs of Big Mac® Sauce for a limited time, so that was my opportunity to finally grab a few samples. I've been trying to recreate it for a couple years now, but I was never able to compare it side by side with the real deal without the rest of the burger. I thought I was pretty close but now I'm finally able to tweak it as closely as possible. In the product description on the German website they're literally claiming "Neither fans, food bloggers nor chefs have revealed our secret yet"—CHALLENGE ACCEPTED, McDonald's!!! I've cloned your pickles, this legendary sauce is next. Who's interested in the final recipe?

I keep reading that the secret ingredient is 1000 island dressing. No idea how true that is.

Didn’t McDonald’s Canada on YouTube do a recipe of Big Mac sauce years ago?
Pretty easy really. The trick is using half mayo, half of the dreaded Miracle Whip.
Ingredients:
1/4 cup mayonnaise, 1/4 cup Miracle Whip
2 tablespoons sweet pickle relish
1 teaspoon yellow mustard
1 teaspoon white vinegar
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 teaspoon paprika
Aren’t the Develey sauces so close to the original that there’s not really a need to copycat it ? I mean they have been producing the McDonald’s sauces for over 50 years now… the same goes for the other Curry, BBQ, White BBQ (BigTasty) etc.
Also, McDonalds lists all the ingredients on their website, so if you really do want to copycat, it should be fairly easy. Here are the ingredients for the BigMac sauce:
Sauce Big Mac: Zutaten: Wasser, Rapsöl, Branntweinessig, Gurken, Glukose-Fruktose-Sirup, Zucker, modifizierte Maisstärke, EIGELB, Gewürze (mit SENF), Salz, Verdickungsmittel (E 415), natürliche Aromen, Hefeextrakt, Festigungsmittel (E 509).
You can just ask for a side of Mac sauce. Usually they’ll give it to you in a 4 piece nugget box. I dip my fries in it.
All this time, couldn’t you have just asked for some sauce on the side without buying the full burger lol?
They don’t have these new prepackaged sauces in my country, but you’ve always been able to just ask for Big Mac sauce, and they scoop some into a little tiny cup with a lid.

You know, they’ve always sold sides of Mac Sauce. They would just put it in a little cup before if you asked for it. You could’ve done this already lol.
It was posted before – but this is supposedly the legit recipe:
mayo: 2/3 cup
sweet pickle relish: 1/3 cup
yellow mustard: 2 tsp
white vinegar: 3/4 tsp
paprika: 1/2 tsp
garlic powder: 1/4 tsp
onion powder: 1/4 tsp
It tastes pretty damn identical. I like adding a bit of dehydrated onion too.

1 cup mayo
1/4 cup sweet relish
2 tbsp yellow mustard
1 tbsp white vinegar
1/2 tsp paprika
1 tsp sugar
1/4 tsp salt
1/8 tsp garlic powder
1/8 tsp onion powder
1 tsp of dehydrated onion that has been rehydrated (lol)
Let it chill in the fridge first before using. 🥶

My biggest question regarding the recipe is whether McDonald’s is using commercial-grade heavy mayo or not. That would change the flavor profile and might account for some of the variations.
Consumers can’t buy heavy mayo off the grocery shelf. It’s typically reserved for restaurant sale.
