Here’s a simple and delicious recipe for baked cod fillets:
Ingredients:
• 2 Wild caught cod fillets (about 4–6 oz each)
• 2 tbsp olive oil or melted butter
• 1 lemon (zested and juiced)
• 2 garlic cloves, minced
• 1 tsp dried parsley (or 1 tbsp fresh parsley, chopped)
• 1 tsp dried thyme or oregano
• Salt and pepper, to taste
• Smoked paprika
Instructions:
1. Preheat the Traeger: Preheat your smoker to 400°F (200°C).
2. Prepare the Cod: Place the cod fillets on a baking sheet lined with parchment paper or lightly greased. Pat them dry with paper towels to remove any excess moisture.
3. Make the Seasoning: In a small bowl, combine the olive oil (or melted butter), lemon juice, lemon zest, minced garlic, parsley, thyme (or oregano), salt, and pepper. Mix well.
4. Season the Fish: Drizzle the seasoning mixture over the cod fillets, making sure to coat each piece evenly.
5. Bake: Place the baking sheet in the preheated Traeger and bake for 12–15 minutes, or until the cod flakes easily with a fork. The exact time will depend on the thickness of the fillets.
6. Serve: Serve the baked cod with extra lemon wedges on the side, and enjoy with your choice of sides like roasted vegetables, rice, or a simple salad.
Optional:
For extra flavor, you can add a sprinkle of grated Parmesan cheese on top before baking for a crispy, cheesy crust.
