I LITERALLY CAN'T I'M OBSESSED THESE THINGS ARE AMAZING.
It's real. It's so easy I feel embarrassed to tell the recipe. Took 5 minutes.
I gave one to my daughter, and said "Hey you wanna try this fudge I made?" And she was like "damn that's so good!" So I told her to guess the ingredients. "Flour, have to be flour". No. "Sugar?" Also no. These are SUGAR FREE. "Cocoa powder?" Nope. She gave up. And then she ate another one because they're so good!
CHICKPEAS. The secret is chickpeas (garbanzo beans for Americans).
Take a can of chickpeas, drain out the liquid (which you can save to make meringue or something), melt chocolate (I used sugar free chocolate chips but you can use any kind). Chickpeas and melted chocolate into the blender, bzzzz, dollop out the mix into a dish (I lined a pan with baking paper) and pop in the fridge to set.
That's it. Done. I cut my batch into 16 squares, which are a pretty typical fudge serving size.
You could easily do a little drizzle of chocolate or berries or peanut butter etc on top or mix in chopped nuts, dried fruit, shredded coconut, literally use your imagination. With vegan chocolate these are also vegan / dairy free.
And it's a nice little protein / fibre healthy treat. It doesn't taste like chickpeas. I'm definitely gonna try mixing in PB2 next batch because they have a real peanut butter cup texture, and I'm 100% certain if you set them in mini cup pans and do a thin chocolate coating they will be the same as a Reece's cup.

Beans are such a great hack! I bet this would be delicious with freeze dried raspberries on top. Raspberries and chocolate are a match made in heaven.

Chickpeas are an incredible find. I feel like I can eat pasta again now that I use chickpea noodles. Volume eater problems. (Ps. I am American who only learned recently what “garbonzo” beans are a thing lol).

I have actually been making my own protein bars using various methods, and one of them was to incorporate melted sugar free chocolate (Bake Believe, ChocZero, Lily) and an approach I took was to make ganache, then pour into the protein bar blend. One site I followed suggested that 2 to 1 ratio for chocolate to cream would result in a fudge like consistency. So I made a batch and just stuck it into the fridge and bam, fudge. The site also said not to use fat free cream or half and half, well, I said f the rules, and did just that, 1/2 cup fat free half and half, 1 cup sugar free chips. Worked perfectly. 1/2 cup of the HH is 80 calories, 1 cup Bake Believe chips is 960 calories. Makes a fair bit, but I sadly didnt pour it out and just kept it in my double boiler top and spoon out one bite at a time. This way you can save about 246 calories with about 40 grams more chocolate.
