These cottage cheese pancakes are possibly my greatest recipe achievement of 2025 because they’re based on the really popular pancakes from Arthur’s Nosh Bar in Montreal. And I actually think I got quite close. Arthur’s original pancakes are inspired by Eastern European Serniki. And they are so fluffy, yet almost custardy, moist, and tangy. They are incredibly delicious. And the team actually published their official recipe in their cookbook, but after trying the recipe at home, this is what they looked like. They were good, but not nearly as fluffy as I wanted. Though, I kept playing with the recipe, swapping the sour cream for Greek yogurt, adding the eggs straight into the batter instead of whipping the egg whites, reducing the overall amount of liquid, and using oil instead of melted butter to help keep the batter cold. I ended up with a batter that was so thick, the pancakes were coming out raw in the middle. So, to fix this, I found that steaming them with a little water for just a couple of minutes got them super fluffy. These have way more protein than your average pancake thanks to the cottage cheese, Greek yogurt, and eggs. And I am just obsessed with the uniquely custardy texture of these. Make sure to eat these hot before they deflate. And let me know if you try them.

I just realized that I've never asked you if you tried the recipe that went around social media a couple of years ago? It was the pancake recipe for the late queen of England. I think they were also called "drop scones." As for these pancakes. It's the chunky part of cottage cheese that's always thrown me off of eating it. I would try your recipe but blending the cottage cheese first. But I do like that you worked on tweaking the recipe to make the best recipe. As someone who watched numerous videos on how to make seitan. And finally decided to make two batches one that I baked and another that was steamed. But I found that the baked ones tasted like savory bread crumbs. And the steamed ones tasted like steamed savory bread. So the flavor is there but none of them tasted like chicken. But I will continue to look for and discover the best tasting recipe. I'm glad that others are also doing the same with various dishes.

1/4 cup milk or water, cold or room temp is fine 57g
2 tsp* oil, any kind 8g
1 tbsp** sugar 12g
2 tsp baking powder
1 tsp kosher salt
2 cups flour 240g
