Roasted sweet potato. Diced, spiced (olive oil, salt, pepper, garlic and onion powders, sweet paprika) and roasted at 425 to desired doneness (I like mine a little crispy)
Pico de gallo. Diced tomatoes, red onion, cilantro, lime juice, salt.
Black bean and corn salsa. Frozen corn toasted in a cast iron pan to get a little char. Cilantro, pickled jalapeños, lime juice.
Brown rice, shredded lettuce.
Simple guac. Mashed avo with lime juice and salt.

I added the optional yogurt to the dressing but otherwise, this whole thing would be 100% plant based.
