Why do you pipe it rather than just scrape it right into the containers?
Thoughts on caramelizing the bananas in the brown sugar first and then adding the milk and bringing to heat?

There’s a Filipino dessert called turon which is like a fried egg roll except inside the crispy wrapper is a banana wrapped in sugar. That’s always waiting for me when I visit my parents.
