Chicken “gyro” is a delicious and healthy pita sandwich! It’s a whole meal within itself and a great weeknight prep recipe. I got my idea for the chicken and homemade skewer from Chef Genevieve LaMonaca.

What you’ll need:
-For the chicken-
2lbs chicken breast or thighs, sliced in half
1/2c Greek yogurt
1/4c olive oil
1 lemon, juice and zest
4 garlic cloves, minced
2tsp salt
1tsp pepper
1tsp oregano
1tsp paprika
1tsp cumin
1sp coriander
1 white onion, cut in half (for homemade skewer)
Wooden skewers
-For the sumac salad-
1/4c olive oil
Juice of 1 lemon
2c cucumbers, diced
2c tomatoes, diced
1 red onion, thinly sliced
1/2c parsley, chopped
1-2tbsp sumac
1tsp salt & pepper

Cut chicken in half and place in bowl. Add olive oil, greek yogurt, lemon juice and zest, garlic, salt, pepper, oregano, paprika, cumin and coriander. Mix well. Marinate for 30 minutes or up to overnight. When ready to cook chicken, preheat oven to 350 degrees. Place both onion halves on baking sheet lined with aluminum foil. Place wooden skewers in onions and place chicken horizontally on wooden skewers. Bake for about 1 hour 15 minutes or until chicken reaches 165 degrees, and is golden. In the meantime, make sumac salad by combining all ingredients in a bowl. Once chicken is done, cut off skewer vertically. Serve on a pita with tzatziki, sumac salad, and feta. Enjoy!

You’ll start by taking your chicken and placing it in a bowl with some oil, Greek yogurt, garlic, and a bunch of really good spices. You’ll want to marinate this for at least 30 minutes so it’s super juicy, but if you can do it overnight, it’ll make it even better. Once you’re ready to cook it, preheat your oven and place your two onion halves on a baking sheet with aluminum foil.
