I bought some yellow cherry tomatoes (but I lost their tag) and they look very similar to this! It’s a thing of beauty, really. Just pulled off another 11 of them, about the size of a pingpong ball two blushing red duces too. Soon I shall have my very first tomato sandwich of the year. Sooooo excited.

It takes 2-3 pounds of tomatoes to can a single quart. Make pasta sauce or soup or can them crushed for a tomato base for recipes.

I’ve fermented the tomatos, blended, strained out the pulp to dehydrate and made tomato powder with the leftover. The fermented tomato sauce I use for bloody Mary’s at home, mix it into goat cheese for a spread, poach fish in it souvide. The only thing is that cooking the fermented sauce loses the funk a little which can be good or bad depending on what you want. In addition it is salty because of the amount of salt you have to add to make it safe so just be aware when you use it.

We made tomato soup one year, when we ended up with this many cherries. I personally will eat caprese anything.
