Smoked Tofu Lettuce Boats

    ###Ingredients

    **Tofu**

    * 200g smoked tofu, diced into small cubes
    * 1 tbsp soy sauce
    * 1 tsp maple syrup
    * 1 tsp sesame oil
    * 1 tsp sriracha
    * 1/2 tsp garlic powder
    * 1 tbsp cornstarch (for extra crisp)

    **Boats**

    * 1 head of romaine, baby gem, or butter lettuce (leaves separated, washed, and dried)
    * 1 small carrot, julienned
    * 1/4 cucumber, sliced into thin matchsticks
    * 1 tbsp spring onions, finely sliced
    * 1 tbsp chili crisp or crushed peanuts
    * Drizzle of peanut

    **Peanut Sauce**

    * 1 tbsp peanut butter
    * 1 tsp soy sauce
    * 1 tsp maple syrup
    * 1–2 tsp warm water to thin
    * Dash of lime juice

    ###Instructions

    1. In a bowl, toss smoked tofu cubes with soy sauce, maple, sesame oil, sriracha, garlic powder, and cornstarch.
    2. Pan-fry or air fry at 200°C for 12–15 mins until golden and crisp.
    3. While the tofu cooks, prep your lettuce leaves, cucumber, carrot, and herbs. Keep it vibrant and colorful.
    4. Lay out lettuce cups, fill each with tofu, then top with veggies, drizzle of sauce, and crunchy toppings.
