1000g APF
230g Starter
20g salt
700g water

Autolyse for 30 mins
Add starter and salt
Knead for 10 mins
Rest for 15 mins
Knead for 8 mins
Rest
After 30 mins
1st stretch and fold
Aftee 30 mins
2nd Stretch and fold
30 mins after do coil fold

Rest. Rise till i reached 70%

Pre shape rest for 20 mins then final shaping. Cold proofing

Next day at 5pm

Oven at 430
Put dough spray water in Cast iron pot lid on for 30 mins
Score at 7mins.continue baking

Take off lid for another 20 mins

Cool.
