🥗 Potato, Beet & Carrot Salad with Creamy Cottage Cheese Dressing, it’s delicious and easy to make!
✅ Ingredients:
For the salad:
• 2 medium potatoes
• 2 large carrots
• 1 large beet
• 1 green apple
• dried cranberries
• Sliced almonds (optional)
For the dressing:
• 2 tablespoons cottage cheese
• 2 tablespoons Greek yogurt (or sour cream, if preferred)
• 3 garlic cloves
• 5 pitted dates
• 1 teaspoon agave syrup (optional)
• Juice of 1 lemon
• 2 tablespoons olive oil
• Salt and pepper to taste
👩🍳 Instructions:
Boil the potatoes, carrots, and cook the whole beet first, let it cool, then dice (cutting before cooking makes it lose color)
Let cool and dice everything.
Blend all the dressing ingredients until smooth and creamy.
In a bowl, combine the veggies and apple, pour in the dressing, and mix gently.
Add dried cranberries and garnish with sliced almonds and extra cranberries if you like.
Agave is optional, dates add natural sweetness.
