I’m Matteo Monti, I’m a chef. Currently, I’m also a host and I’ve been working for a few years now, traveling around and spending time
in kitchens. I decided to set off on my own path, focusing on the world of fresh pasta. We’ll explore different types of gnocchi,
starting with what, for me, based on my tradition, is
the gnocchi par excellence: potato gnocchi,
which I’ll properly accompany with a good ragù. The same gnocchi, however,
can also be made Sorrento-style, gratinated with tomato
that we’ll cook very briefly. Using a very, very good tomato,
and then gratinated in the oven. Next, we’ll look at
two different types of gnocchi. They’re called gnocchi,
but they have nothing to do with the potato gnocchi from central Italy. One is Roman-style gnocchi, the other is a gnocchi known as
gnudo in Tuscany. It’s known for not having
any kind of wrapping. In Tuscany, maremmani are very popular, large tortelli filled with ricotta and spinach. This is just the filling, without the pasta. Gnocchi are a hug, they’re the hug
of Italian cooking to me. Gnocchi mean celebration, gnocchi mean friendship,
sharing, being together. And in a moment of loneliness, precisely, having the warm embrace
of this little ball of potatoes.
