Tonight’s plant-based dinner is presented by veggies, rice, and lemon herb tofu. I did two packs of tofu in this one so that we’d have some leftover. Big batch of rice. And I do a blend of jasmine rice and brown rice. And then we have some lettuce from the garden. I lightly cooked some baby carrots. And here we’ve got some roasted cauliflower with it. Delicious. And you’ve got to have a sauce. So, I just make a very quick tahini sauce. This one is just tahini and cumin, apple cider vinegar, water, and just a smidgen, like a smidgum of maple syrup. So, maybe an idea for you here to put together a plant-based meal for yourself. If you guys want the recipe for the lemon herb tofu, it’s so easy. It’s so delicious.
