Recipe
1. Quarter 6 tomatoes, 1 onion, 1 red capsicum. Add into a baking tray with one head of garlic, thyme, olive oil, salt and pepper and bake at 200C for 30min.
2. Dice 2 carrots, 1 celery stick, 1 onion and sauté on medium heat until fragrant. Add salt and pepper.
3. Add basil, ~2 tbs of tomato paste and sauté. Add into roasted veges, squeeze out the roasted garlic, add 1 cup of chicken stock and simmer on medium for 35 minutes whilst stirring occasionally to prevent the bottom from burning.
4. Blend until smooth and mix in 150mL of heavy cream. Salt and pepper to taste.
5. For the pesto grind, 1 garlic, toasted pine nuts, lots of basil, olive oil, grated Parmesan until you have a nice thick paste. Salt and pepper to taste
6. For the toasty I spread mayo on sourdough, layered with mixed cheese (cheddar, mozzarella, Parmesan), and 2 slices of tasty cheese, and pesto spread.
7. Melt some butter and toast bread on both sides. Then turn to low and put the lid on to make sure the cheese melts.
8. Garnish tomato soup with olive oil, heavy cream, chilly flakes, basil, pepper and enjoy together with the toasty. ❤️

  1. I don’t know you, but from watching your dish, I can tell that like me you care about your food tasting divine. You care about taste, texture and appearance of your food, and I can relate. I love all of the same things and that’s why I don’t mind to put in the extra work to achieve those things when I’m cooking
