Add some water, not a lot. Add some sugar, not a lot. And then add some salt, not a lot. Stir and cover again for 5-10 mins (depends on ur flame)

If you’re trying to caramelize them, you’re using (quite a bit) too much heat. You might be able to salvage them to some extent by turning the heat way down and adding a small amount of water.

Turn down your heat, add some butter and bourbon and cover and let steam for awhile.
Then boil off the liquid that accumulates without the lid.
Trust me, they’re amazing.

Think of browning them as more of a logarithmic shape. As water leaves, their ability to brown increases exponentially, be careful to adjust the heat downward in proportion of this. That said, these look fantastic Friend.
