This Greek-inspired pasta salad is everything you want in a summer meal β cool, crunchy, colorful, and so easy to make! Itβs packed with flavor and texture, and works great as a light lunch, side dish, or even meal prep.
π₯ Ingredients:
Cooked penne pasta (or any kind you like)
Cherry tomatoes, halved
Cucumber, diced
Kalamata olives or black olives
Roasted beetroot, cubed
Crumbled feta cheese
Walnuts & sunflower seeds for crunch
π§ Dressing:
2 tbsp olive oil
1 tbsp lemon juice or vinegar
1 tbsp Greek yogurt
Salt & pepper to taste
1/2 tsp oregano
1/4 tsp onion powder & garlic powder
π©βπ³ How to Make It:
1. Mix the dressing in a small bowl.
2. In a large bowl, toss together pasta, veggies, beets, olives, and feta.
3. Pour over the dressing and mix gently.
4. Top with crushed walnuts and sunflower seeds.
You can serve it right away or chill it for a while β it tastes even better cold on hot summer days π
