Cut 1 lb of chicken breasts or thighs into
bite sized pieces. Drizzle with olive oil and
season with a salt, pepper and garlic blend
and smoked paprika. Heat 2 tablespoons of
butter in a skillet over medium heat. Cook
the chicken for about 5 minutes. Add 4-5
minced garlic and cook for 2 more minutes
Push the chicken to one side. Add 1
tablespoon of butter and 1 cup of white
rice (I used basmati). Toast the rice for a
couple minutes then add 2 cups of chopped
broccoli and 2 cups of chicken broth. Bring
to a boil. Cover, reduce heat to a simmer
and cook for 12-15 minutes. When it’s
finished, season with garlic powder, onion
powder and salt and pepper. Put 2 cups of
grated cheddar cheese on top and put the
lid back on until it’s melted. Or you can
put it in the oven for a few minutes under
the broiler. Enjoy!
This chicken broccoli rice casserole is one of our go-to meals. We call it the casserole and it is so good and so easy. I just cut up a couple chicken breasts and season them however you like. I use some salt, pepper, garlic, and a little bit of paprika. I melted some butter in a pan and I’m just going to brown these with some garlic until they are cooked through. And then I’m going to want to toast up my rice a little bit. I like when you toast up the rice. I think it comes out a little bit better. Then I have one head of broccoli and about two cups of water. You may or may not need to add more depending on how much broccoli, rice, whatever. You’re going to cover and simmer until your rice is tender. I seasoned it with a little more garlic, onion, and salt and pepper. Um, and you could eat it just like this cuz it’s super tasty, but we like cheese, and I think cheese makes everything better. So, I topped it with about two cups of cheese. You can use any cheese you want until it’s melted. And enjoy.
