Tsoureki recipe
– [ ] 1365 gr Bread flour
– [ ] 220 gr butter
– [ ] 340 gr sugar
– [ ] 4 lg eggs (about 200gr) plus additional egg for brushing loaves before baking
– [ ] 410 gr whole milk
– [ ] 1/4c OJ
– [ ] Zest of one orange
– [ ] 8 gr yeast (one packet)
– [ ] 1 tsp sugar
– [ ] 4 gr salt
– [ ] Sesames seeds
– [ ] 1/4 – 1/2 tsp cinnamon plus additional for sprinkling
– [ ] 1/8 tsp ground clove

Place flour, salt and spices in a large bowl
Combine milk, butter and sugar – warm until sugar is melted. DO NOT BOIL. Set aside to cool.
Beat eggs
Dissolve yeast in a quarter cup of warm water (aprx 100 degrees F) with a tsp of sugar and let sit until foamy.
Add the cooled milk mixture to the flour, then add the yeast, stir in the orange juice and lastly add the eggs.
Mix well, once well incorporated continue kneading for about 20 minutes until the dough is smooth – up to 20 minutes (This can also be done in a mixer that can handle enriched dough).
Cover and let raise until doubled in size. Can take up the 5 or 6 hours.
Weigh your dough and divide into 9 equal pieces. This will give you enough strands for 3, three strand braided loaves.
Braid your loaves and let raise again. Brush with beaten egg and sprinkle with sesame seeds and additional cinnamon if desired.
Bake until golden brown at 350 degrees F for 30 to 40 minutes depending on the size of your loaves.
