🍎 Apple Crumble Brioche Buns Recipe (8 buns) ⬇️
🔹 Brioche Dough
Ingredients:
500g (4 cups) all-purpose flour
50g (¼ cup) granulated sugar
1 tsp salt
11g (1 tbsp) instant yeast
2 tbsp vegetable oil
1 egg white
250ml (1 cup) whole milk (lukewarm)

Instructions:
Mix flour, sugar, salt, and yeast in a bowl.
Add eggs and warm milk. Mix on low until it forms a dough (5–7 min).
Gradually add milk, a bit at a time, until fully incorporated. Mix until smooth and stretchy (10–15 min).
Cover and let rise for 1.5–2 hours at room temp.

🔹 Spiced Apple Filling
Ingredients:
2 apples (peeled, diced small)
2 tbsp butter
2 tbsp brown / regular sugar
1 tsp cinnamon
half an orange / lemon
1 tbsp cornstarch

Instructions:
Sauté apples in butter.
Mix in sugar, spices and starch over medium heat until thicken(5–7 min).
Let it Cool.

🔹 Crumble Topping
Ingredients:
50g (¼ cup) butter (cold, diced)
50g (¼ cup) flour
40g (3 tbsp) brown sugar
Pinch of salt

Instructions:
Rub all ingredients together with fingers until crumbly.
Chill until needed.

🔹 Assembly & Baking
Divide brioche dough into 8 equal balls. Roll smooth and place on parchment-lined tray.
Let rise for 30 min, covered, until puffy.
Use your fingers or a glass bottom to press a deep well into the center of each bun.
Brush the buns with egg wash (egg yalk + bit of milk)
Fill each center with a spoon of apple filling, then a sprinkle of crumble.
Bake at 180°C (350°F) for 18–22 minutes until golden brown.
Cool slightly and optionally drizzle with icing glaze. (Glaze: Combine 1/2 cup icing sugar with 1-2 tbsp milk)
