🍪 Chocolate Chip Pecan Pie Cookie Bars
Yields: One 9×9 inch (23×23 cm) pan
✨ Part 1: Chocolate Chip Cookie Crust
Ingredients:
• 1 cup (227 g) unsalted butter, softened
• ½ cup (100 g) granulated sugar
• ¾ cup (150 g) packed brown sugar
• 1 large egg (about 50 g)
• 2 tsp vanilla bean paste (or extract)
• 2 cups (240 g) all-purpose flour
• 1¼ tsp kosher salt (or 1 tsp table salt)
• ½ tsp baking powder
• ¼ tsp baking soda
• ½ cup (45 g) rolled oats
• ¾ cup (130 g) mini semi-sweet chocolate chips
• ½ cup (60 g) pecan cookie bits (or chopped pecans)
Instructions:
1 Preheat your oven to 350°F (175°C). Grease a 9×9 inch (23×23 cm) baking pan and line with parchment paper (leaving some overhang for easy lifting).
2 Cream the softened butter, granulated sugar, and brown sugar together until light and fluffy.
3 Add the egg and vanilla, mixing until smooth.
4 In a separate bowl, whisk together flour, salt, baking powder, and baking soda.
5 Mix dry ingredients into the wet ingredients until mostly combined.
6 Fold in the oats, chocolate chips, and pecan bits until evenly distributed.
7 Press half of the dough into an even layer in your prepared pan.
8 Par-bake the crust for 25–30 minutes, until golden brown around the edges.
9 Let cool completely before adding the pecan pie topping.
✨ Part 2: Brown Sugar Pecan Pie Topping
Ingredients:
• 2 cups (200 g) pecan halves
• 1 cup (227 g) unsalted butter
• 2 cups (400 g) packed light or dark brown sugar
• 1½ cups (360 ml) heavy cream
• ½ tsp salt
• 4 Tbsp (60 ml) light corn syrup
• ¾ cup (130 g) mini semi-sweet chocolate chips
Instructions:
1 Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.
2 Toast the pecan halves for 8–10 minutes, then set aside.
3 In a medium saucepan, combine butter, brown sugar, heavy cream, salt, and corn syrup over medium heat. Stir with a spatula until melted and smooth.
4 Bring to a gentle boil or simmer. Once bubbling, stop stirring and let it simmer for 1–2 minutes.
5 Remove from heat, then stir in toasted pecans and chocolate chips.
6 Let the topping cool completely to thicken.
7 Spoon the cooled pecan pie topping over the baked cookie crust. Gently spread it out evenly.
8 Let everything set at room temperature or chill briefly in the fridge.
9 Slice into bars and serve!

After we bake our cookie bars, we’re going to make our pecan pie topping. I like to think of myself as the baker’s baker because sometimes you need a little bit of skill to pull these recipes off. But this is fairly easy. Even my Pillsbury Grants Biscuits warriors can pull this off. And you about to be like, “What you got against Pillsberry Grants Biscuits? Everything.” Cuz you think you did something and you didn’t do nothing. I also got a chip on my shoulder about shrimp Alfredo, chicken Alfredo, and the way y’all put everything in an egg roll.
