I made a batch of lentils this week to make salad. Today I really wanted fried rice and I had leftover rice to use up. And bok choy. So i decided to test it out.

And it was great!

I made my fried rice with some scallions as a base – i chopped up the greens and the whites (it was more of a baby onion).

This got sauteed in toasted sesame oil and a smidge of ghee. I added in a big dose of these not hot korean chili flakes I got. I have a huge pack and you can absolutely eat a teaspoon and not notice. They are a pretty color though.

From here I added rice, lentils, salt, pepper, extra pepper flakes, and a bit of msg salt. These got crisped up a bit. I also added garlic powder. I added some soy sauce.

Then came in a beaten egg, cooked till it set. And the veggies cooked till just soft – just chopped bok choy and thinly sliced carrot. Ginger would have been great if i remembered. I added a bit more salt for the veggies.

And lunch was served. 100% recommend this addition for fried rice as a main or a side.

    It sounds good to me. Like a South Asian version of mujadara. Mind you, there are few things I don’t think adding lentils would improve. Food of the Gods.
