If you wanna truly imrpove it. Scallions should be unfirom and thin, dont throw random meats in, make a chasu from chicken or pork, cook the egg less if you want a gooey yolk, Don’t throw randoms stuff in there like purple cabbage or mushrooms or carrots, just keep it simple.
