Buffalo’s new gnocchi food truck serves a taste of Italy on the go.
BUFFALO, N.Y. — Buffalo’s food truck scene just got a new addition, and serving up handmade Italian comfort food at festivals and private events.
The Gnocchi Co. dishes out homemade potato gnocchi in five artisanal sauces: pistachio pesto, gorgonzola cream, a la vodka, Sunday red, and Bolognese. There’s also fried gnocchi for dessert, covered in cinnamon sugar.
Behind the wheel is Owner Alan Gnoinski, a local wealth manager by day who decided to take his passion for home cooking to the food trailer.
“It’s been a long time coming,” Gnoinski told 2 On Your Side. “I’ve always had an interest and a love for cooking and food, and cooking for friends.”
Customers can order a single serving or try a flight of three sauces. The “Italian Flag” combination has become an early favorite, featuring pistachio pesto, gorgonzola cream, and Sunday red sauces.
“Pistachio pesto is definitely the star of the show,” Gnoinski said. “No one else around here is really doing it, and I think people love how different it is.”
Gnoinski is now gearing up for two major Buffalo food events: the Galbani Italian Heritage Festival next weekend, and at the Erie County Fair Aug. 6 to Aug. 17.
“We hadn’t even sold anything yet because we’ve only been at this for a month, but a few weeks ago we were able to find out that we got accepted to the Fair,” Gnoinski says. “We’re up to 11 employees now, working all the time. Trying to make as many potato gnocchi that we can, fresh-frozen for everybody at the fair.”
But beyond the buzz, Gnoinski hopes customers walk away with more than just a full stomach.
“A little taste of home and something different,” he said. “The quality. It’s all homemade, artisanal sauces. It’s just a little taste of Italy, right here in Buffalo.”
