I sous vide at 130F for 1 1/2 hours, chilled in the fridge for 10 min, then seared on a cast iron for a couple minutes. This is the best steak I’ve made! I went for medium rare, how did I do? Why is there a debate around cooling the steak before sear? It works well for me, teach me please.

  2. 10 min in an ice bath is better than 10 min in the fridge. There’s actually very little difference between 10 min in the fridge or 10 min on the counter.

    Looks great! But try an ice bath.. more effective IMO. For a steak that size 5 min is enough

    For the ice bath (I’m new to SV), so I just keep the steak in the bag I had cooked it in?
