200 gms – Asparagus (peeled & chopped)
1 tbsp – Butter
4 – Garlic Cloves (chopped)
½ – Onion (chopped)
8-10 – Spinach Leaves (roughly torn)
1½ – cups Vegetable Stock
½ tsp – Dried Oregano
½ cup – Fresh Cream
Salt (to taste)
Fresh Cream (for garnishing)
Cheese (for garnishing)
Black Pepper (for garnishing)
Blanched Asparagus (for garnishing)

Looking for something comforting? A classic bowl which is packed with
nutrition is Cream Of Asparagus Soup So let’s quickly see the recipe. So to start with I’ve taken around
200 grams of Asparagus here and now I’m going to
show you how to clean it. So the best way to clean your Asparagus is first we need to get
rid of this wooden part which is almost around 2 inches. So just keep moving your
fingers and wherever you find a soft spot snap it. If it breaks easily that
means it’s a perfect spot to clean the Asparagus and get rid of this woody portion. In the same way, let’s snap and
clean the remaining Asparagus. The next step is to slightly peel this. Get rid of all these buds. In this way, clean all the Asparagus. After cleaning the Asparagus,
cut them into small pieces. The Asparagus is cleaned and chopped. And now it’s time to make the soup. For which, I’m going to
heat up a tbsp of Butter. Next into this, add in 4
cloves of Garlic chopped, 1/2 a Onion chopped, saute this for at least a good
2-3 minutes till the Onions are soft. Next add in the chopped Asparagus. Salt and let this cook for 3-4 minutes. After the Asparagus is soften a little bit. Add in 8-10 leaves of Spinach. This is just to add a
little bit of Green pinch to the soup. Add in 1 and 1/2 cups of Vegetables Stock. If you don’t have Vegetable stock,
you can always use some Water. and let this boil for at least 5-6 minutes. Once the Asparagus is soften Turn off the flame let this cool down for 5-6 minutes and grind this into a smooth puree. Our smooth puree ready here pour it into the pan Bring it to a boil. 1/2 a tsp of Oregano, Add in 1/2 a cup of Cream, Boil it for 2-3 minutes, Little more Salt. And now time to plate the soup. Grate some Cheese,
Parmesan would be the best. Crush some Black Pepper as per taste. A warm and creamy bowl
of Asparagus soup is ready I’m sure this is so comforting
