Hi everyone, welcome to Cook Stacy Cook. Today we are making General sauce chicken. On my last trip to Taiwan, I visited the original restaurant that created this dish to try it and it was so delicious. The tender chicken was covered in a well balanced savory sauce with a hint of sweet, sour, and spicy taste. I have been trying to recreate this dish at home and after many attempts, I have finally came up with a recipe that I am satisfied with. I would like to share this recipe with you today. Let’s get started. We will start by finally mincing four cloves of garlic and cutting one shallot into thin slices. Then chop one green onion into small pieces. We will also prepare some dry chili pepper. I am going for a very mild level of spiciness, so I am using a hole. You can chop the peppers a few times to make your dish more spicy. Next, we need to create a chicken broth and corn starch mixture. Simply mix chicken broth and some corn starch together and stir until all the corn starch dissolves. Now the chicken, you can use skinless chicken breast or chicken thigh. Cut it into thick slices and marinate it with salt, soy sauce, corn starch, a little bit of baking soda and water. Mix everything evenly and let it marinate for 30 minutes. Right before you are about to cook, mix the chicken with more corn starch. This helps to create a crust on the chicken when we pan fry it. Now we are ready to cook. Add some oil to a hot pan over medium high heat. When the oil is hot, add the chicken and evenly spread it out in the pan. Let the chicken pan fry for about 3 to three and 1/2 minutes. We are looking for a nice golden crust like this. Then turn the chicken over and pan fry until the other side also has a nice golden crust. When both sides look nice and golden like this, we can remove it from the pan. Now using the remaining oil, we will briefly saute the shallot. Then add the dry chili pepper and continue to sauté until some of the shallot starts to look slightly brown. Now add the minced garlic and keep on sautéing just enough to bring out the flavor of the garlic. When you can smell the garlic, it’s time to add the chicken back to the pan. Give the chicken a few toss to infuse it with the flavors of the aromatics. Then we can remove everything from the pan. Now turn the heat down to low and add some soy sauce, dark soy sauce, and sugar to the pan. Mix the sugar and the soy sauce until all the sugar has dissolved. Then we can add the chicken broth and corn starch mixture. Remember to stir the mixture right before adding it because the corn starch tends to settle on the bottom. Gently stir the liquid in the pan as it comes to a boil and turns into a sauce. Once the sauce starts to boil, add some black rice vinegar and sesame to the sauce and turn the heat off. Now add the chicken and the chopped green onion to the pan and toss the chicken until it is evenly coated with the sauce. And we are done. This general sauce chicken is absolutely delicious. The chicken is tender with a thin crust on the outside and coated with a delicious and wellbalanced sauce. Both the smell and the flavor are very appetizing. I hope you will give my recipe a try.
