Welcome to episode two of teaching my partner how to cook healthy recipes. Today we made smoky baba ganoush flatbreads inspired by this massive flatbread we found at the South Melbourne markets. We thought it’d be delicious to spread a dip on top and considering that J had never tasted or cooked bab ganosh, I thought it’d be the perfect option. We started by roasting the eggplants and once cooled, we removed the skin. We strained the inside of the eggplants to remove the excess liquid before adding it to a food processor with all the other dip ingredients. My IBS already struggled through a vegan diet.. vegetarian isn’t ok for me. My ex made me think being underweight was normal for me even though I didn’t feel well and told him so.

If you cook the eggplant directly on the gas hob to cook instead of the oven, you get a WAAAY smokier taste. Looks great but I think this would make it amazing!
