Today I am showing you how to make easy Southern Living Chicken and Wild Rice Casserole. It’s really delicious and can feed up to. I would say 8 to 10 people. It’s perfect for making ahead of time. You can put it in the refrigerator put foil on it and when you get home from work, just pop it in the oven. It’s a great family friendly casserole that is inexpensive easy to make and a lot of it is pantry items that you put together.

Hi all. Today I’m showing you Southern Living’s chicken and wild rice casserole. It’s inexpensive and delicious. Ingredients you’ll need. I’ve listed everything here that you will need as again it’s pretty much a pantry um casserole and very inexpensive and easy to make. First, you’ll need to preheat your oven to 350°. Next, I toast um the almonds in a dry pan. And I just put them in there evenly spread them out. And then I place them in the preheated 350° oven. And I’ll toast between 6 to 8 minutes or until lightly toasted. Then I’ll bring them out and I’ll put them in a bowl um to cool off separately to the side. Next, I’m going to preheat the oven to 400° because now I’m going to work on the chicken. I’m going to measure out about 3 lbs of chicken breast strips and place them in a baking dish. And then I’m putting them in the preheated 400°ree oven. And so you’re you’re baking the 3 lbs of chicken breast strips in a 400°ree oven that’s preheated for 20 25 minutes. You can also buy rotisserie chicken and do it this way. And next, I’m using the box direction to cook two boxes of the long and wild rice mixture. And then next, I’m going to finally chop two large onions. And again, I’m going to use the food processor because I have horrible chopping skills and it just makes it a lot easier. And there, I’m done. Next, I’m going to finely dice four stocks of celery. And after that, I’m going to take two cans of drained water chestnuts and I’m going to chop them. Next, I’m going to measure out 1/4 cup of butter. And over a medium high flame in a stock pot, I’ll put the butter in there to melt. And then I’m going to add the chopped onions. Then I’m going to add the diced celery. Put that in there. And I’m going to cook them until the the onions are translucent. And next, I’m going to bring the cooked chicken out of the oven. And then I’m going to preheat the oven to 350°. And the next I’m going to grate the cheddar cheese. This will give you about four cups of um shredded cheese. This is not a dietetic casserole. That’d be a lot of cheese. And then next, I’m going to dice the chicken that’s cooked. And now I’ve measured out one cup of whole milk. And I brought the celery and onion off the stove. And then I’m going to add the diced chicken to it. And then next I have in a separate mixing bowl, I’ve melted 3 tablespoons of butter. And I’m going to add 2 cups of panco breadcrumb. I’m going to mix it really well. This is the breadcrumb topping that I put on top of the casserole. Join your breakfast. And then next I’m going to add one cup of whole milk sour cream or full fat. And I’m going to add that to you stockp. And I’m going to mix thoroughly. There’s a lot of mixing thoroughly here. And then next I add the chopped water chestnuts. This gives a nice crunch to it. I mix thoroughly. And then next I add two cans of cream of mushroom soup. And then again I mix thoroughly. And now I add the one cup of whole milk to the stock pot and mix thoroughly. Again, as I mentioned, everything is mixing thoroughly. Now I just add a half a teaspoon of kosher salt and a half a teaspoon of freshly ground black pepper. And we’re almost to the finish line. Mixing thoroughly once again. And now we’re going to add the two boxes of cooked long grain wild rice mixture. And then again, we’re going to mix everything together. And now we’re adding the shredded cheese. We’re almost there. For one pound of shredded cheddar. It’s actually a very simple casserole to make it just that there’s a few steps. Lastly, we add the toasted slivered almonds and mix. The almonds will give a bit of crunch as well. Next, I’m just going to spray generously the deep dish uh baking dish with spray. And then I’m going to spoon the casserole mixture in. This can feed a family of six or eight. You’ll have leftovers definitely. You can also make this ahead of time and keep it in the refrigerator until you’re ready to bake. Now, next, I’m going to top with panko breadrumbs, the mixture I made. And then I’m going to place the casserole in the preheated 350°ree oven. And we’re going to bake in the preheated 350°ree oven for 35 minutes. And we’re going to bring it out of the oven and serve while hot. I guarantee your family will love it. It’s so delicious and addictive. I am not a political person, but I am very much for FEMA. I think we’ve seen how important FEMA is. And if it’s not running on all cylinders, tragedy does happen. When you don’t have the people in positions to let warn people that things are getting worse or satellites are offline and the information is not being shared or phones aren’t getting answered to flood victims or states are getting denied FEMA disaster relief. It’s going to be very difficult for these places to recover because if a business is destroyed or homes are destroyed, they’re not paying taxes. You’re not saving money by by getting rid of FEMA. You’re actually it’s going to cost more. And as my mama says, you’re basically spite you’re spiting yourself. You’re you’re cutting off your nose to spite your face. It’s just not sound soundpack practice, business practice or government practice. I don’t know what else to say about that. So, that’s the only thing I ever talk about that’s anywhere near political. And it’s basically because I want to help people that are in need. And when I see I turn on the TV and I see what’s happened to them, I I my heart is just crushed. And those 26 children that died and probably more cuz they’re still missing. I just can’t get over it. It’s horrible.
