For a quick and easy snack, you have to try this healthy carrot cake. It’s rich in nutrients and unbelievably moist, and you won’t regret it. First thing you want to do is mash up two ripe bananas. And then we’ll add in a cup of milk and mix well. Add in your oats, cinnamon, baking powder, and nuts and give it a mix. Then add in your grated carrots and give that a mix. And when mixed in, add in your raisins. Once mixed thoroughly, place your mix into the line tin and pat it down quite tightly. We’re going to bake this at 170 for 25 minutes. And once cooled, your carrot cake’s ready and you can enjoy at your leisure.

    Ingredients:
    Oat flour x 120g
    Oats x 80g
    Bananas x 2 (mashed)
    Milk x 1 cup
    Cinnamon x 1tsp
    Baking powder x 1tsp
    Walnuts x 50g (break up in to small pieces if kids will be eating)
    Carrot x 2 (grated)
    Raisins x 100g

    Method:
    1. Pre heat oven to 170c
    2. Mash bananas in a bowl and stir in the milk.
    3. Add in the oats, cinnamon, baking powder & walnuts and mix well
    4. Add in grated carrots and raisins and mix thoroughly
    5. Once mixed, place mixture in to a lined tin and bake for approx 25mins (give it the knife test)
    6. For best results, let cool fully and then enjoy your cake
